Vegetable Soup



Catherine says “Vegetable soup is a really good way to increase vegetable intake for your child, particularly for vegetables that they wouldn’t usually eat. The sweetness of the carrots and parsnips and the garlic give this soup a flavour that kids will love. It also has a very smooth texture, so it doesn’t have any of the ‘lumpy’ bits that kids dislike. Carrots and parsnips are very high in fibre which makes them very beneficial for digestion and potassium. Parsnips are really high in vitamin C which will help the immune system and carrots are very high in vitamin A which helps immunity and supports good eye health.
Onions, garlic and leeks are high in sulphur which helps the liver to remove toxins from the body.”
