Noodles with Chicken and Soy Dressing



Catherine says “This quick dish is a big hit with kids. The chicken is a good protein source while the sweet taste of carrot, mingles well with the soy sauce. Carrots are the highest source of betacarotene which is good for the immune system and an important nutrient for eyesight. Soy sauce is a good source of iron, manganese and vitamin B2. Check the label to ensure that it doesn’t contain MSG as this can be overstimulating to kids’ brains. Wheat-free versions are also available. Use wholewheat noodles to increase fibre and vitamin B intake. Wheat-free noodles are also available”.
