Catherine says “Another favourite, this can actually be a very healthy dish. Substituting brown rice instead of white rice increases fibre, vitamin B and magnesium content. The small sizes of the vegetables are more acceptable to kids and the blend of corn, peas, shallot and garlic gives a well rounded vegetable in-take that is high in fibre as well as vitamins and mineral. This dish is good for all kids but it would be particularly beneficial for those that have slow digestion or constipation. Brown rice is also very healing for the gut wall so is good for conditions like Irritable Bowel Syndrome (IBS).”
